The kids' Favorite Chocolate Chip Banana Bread
This morning was a rude awakening after 2 weeks of blissful holiday break.
We did a great job of slowing down and simply enjoying being together. Today was back to routines, work, school and schedules.
To make crawling out of bed in the pitch dark a little bit better I promised the kids I'd have their favorite Chocolate Chip Banana Bread waiting for them when they got off the bus.
There is something about walking into the house and having it smell like fresh baked goods that just makes me happy. That's the kind of home we want to create for our kids and this recipe makes that simple.
Best part is, I know you've got brown bananas in your fruit bowl just waiting for you to whip this up. And I bet you'll be able to do it before your oven is even finished preheating!
I'd like to call these a Red Tin Treat, but the kids basically devoured the entire loaf so it didn't make it into the Red Tin. Sometimes I'll double the batch and make them as muffins instead of a loaf, that way we're sure to have some left overs!
The Kid's Favorite Chocolate Chip Banana Bread
- 4 ripe bananas
- 3/4 cup sugar
- 1 egg
- 1/4 cup melted butter
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 1/2 cups flour
- 1 cup chocolate chips
Preheat the oven to 350 degrees. Grease a loaf pan and set aside. In the bowl of an electric mixer combine the bananas, sugar, egg and butter. Mix until combined. Then add in the salt, baking soda, and flour. Once the dry ingredients are well incorporated add in the chocolate chips then pour into the prepared baking pan. Bake for 50-60 minutes, or until a toothpick inserted in the middle comes out clean.
