If you're like me and ready to hitch hike to Hawaii to get a little sun on your face, do this : walk into your kitchen, turn your oven to 350 and warm yourself up by it.

Then pull out these 5 things; coconut flakes, 3 bananas, pecans, vanilla, any kind of dried fruit...and just a pinch of salt (okay that's 6 things).

Now you're ready to bake away the winter blues and make a super yummy gluten, egg, dairy and even refined sugar free treat. These coconut cookies will make you think you're sitting on a beach soaking in the sun.

Well, maybe not, but at least you'll have a healthy snack or after school treat for your family!

Coconut Cookies

  • 3 bananas

  • 2 cups sweetened coconut flakes (you can used unsweetened if you want to cut out all extra sugar)

  • 1 tsp vanilla

  • 3/4 cup finely chopped or ground pecans - my kids don't like big nut chunks so I grind them up pretty small.

  • 1 cup finely diced dried fruit (apricots, peaches, plums...), raisins or mini chocolate chips

  • 1/4 tsp salt

Preheat the oven to 350 degrees. In a medium sized mixing bowl, mash the bananas. Add in the rest of the ingredients. Blend until combined. Drop heaping tablespoons of batter onto a greased or parchment lined baking sheet. Flatten the scoops of batter out into thin disks. Bake for 15-20 minutes. You want to bake these until most of the moisture has cooked off. Keep them in the oven long enough to toast the outer edges.

 

Now make some tea or hot cocoa and enjoy a few more days of snuggling by the fire.
