The Quickest Taco Soup Around
If you’re looking at your calendar this week trying to figure out what you can make for dinner that is quick, easy, delicious and uses up all the randoms leftover in the fridge. I’ve got you covered. Say hello to the Quickest and Easiest Taco Soup around!
If you have a crock pot, break that baby out. Pour all of the ingredients in while you’re eating your toast for breakfast, set it on warm and you’ll have a home that smells delicious and dinner waiting for you when you walk in the door.
Plus who doesn’t love getting to use up the bag of chip crumbs, that half jar of salsa and those random cans of beans that have been sitting in the cupboard?!
Taco Soup
Serves 2-4
½ lb ground beef cooked with taco seasoning
1 (8oz) jar of salsa or 1 cup
1 cup water
1 can of Kidney Beans, WITH their liquid
1 can of Chili Beans in a pepper, onion sauce, WITH their liquid
1 cup crushed Tortilla Chips
Toppings:
Cheddar Cheese
Sour Cream
Cilantro
Lime Juice
Avocado
Grilled Jalapeños
**I typically make this soup when I have left over taco meat already made. If you’re using uncooked ground beef start off sautéing the beef and cooking as directed with taco seasoning. Then add in the rest of the ingredients
Add all of the ingredients into a large stock pot, or crock pot. Pour the beans in WITH their juice. Crush the tortilla chips with your hands as you add them in (this is also a GREAT way to use up all the broken chips at the bottom of the bag!). Bring to a low simmer and allow to cook on med/lo for 20 minutes to help all of the flavors combine. If you’re using your crock pot, set it to warm and let it do the work for you while you’re out doing the work of living!
Serve with whatever toppings you have on hand
This soup is great to use with leftover taco fixings, throw in anything in your fridge that you’d normally put on your tacos! It freezes really well. If you want to make more simply double, triple or quadruple the ingredients.
