Sourdough Pizza : How to Make, Bake, Freeze and Enjoy Any Friday You Want
What's better than pulling fresh sourdough pizza dough out of your fridge with zero time spent in the kitchen that day? It was a game changer when I realized we could make big batches of sourdough dough on Monday or Tuesday and then use the dough whenever we wanted later in the week. And better yet, you can freeze the dough to use even later that month or beyond if needed! This is how I make Friday Night Pizza so EASY! My Sourdough Schedule
This is the schedule I follow on weeks that I’m making the sourdough dough. But since I can make a BIG batch of dough and keep it in the fridge for up to 14 days, I only go through these steps once every couple weeks. But we have fresh bread and pizza, focaccia, rolls, or sandwich bread whenever we want.
These are all 'ish' times, adjust them to fit your week and your life.
8-9am Monday Morning
take my sourdough starter jar out of the fridge
put 50 grams of the cold starter into a clean quart size jar and feed it with 200 grams water + 200 grams organic all purpose flour
6pm Monday Evening - while I'm making dinner
Mix up the pizza dough (see recipe below) using the fully active starter. It should have doubled to fill the quart size jar. If it didn’t double in size watch this video and follow these feeding instructions.
Once you’ve finished the final stretch and fold for the pizza dough you can either put the dough in the fridge to rest, proof, rise and wait for pizza night. Or you can Freeze it!
How to Freeze Your Pizza Dough
I suggest freezing your dough in either single crust portions or in the amount you know your family would eat. I typically freeze 600 grams in a single gallon size bag so we can make 2 thinner pizzas when I take it out of the freezer. Here are the measurements I go off of, you’ll be able to save whatever works best for you and your family!
For a single crust Thin medium size pizza freeze 300 grams
For a single crust Thick medium size pizza freeze 450-500 grams
Put the dough in a quart or gallon size freezer bag, or an airtight freezer container.
Option 1 - if you know you won’t use all of the dough for your upcoming pizza nights you can freeze the dough right after the final stretch and fold.
Option 2 - if you aren't sure if you'll use the dough, just wait till pizza night. Any dough not used can go into freezer bags/containers and into the freezer!

360 grams active sourdough starter (aka Levain)
550 grams room temperature water
1000 grams organic all purpose unbleached flour
25 grams salt
if you are not using a stand mixer, use your hands to stretch and fold the dough every 30 minutes.
Once you've finished the last stretch and fold, put the dough in the fridge to proof until you pull it out for pizza day!

9am - pull your frozen dough out of the freezer and let it rest on the counter till you're ready to press it into the pizza pans in the afternoon
2-4pm - press dough into your pizza pans, cover with plastic wrap and set in a warm spot to rise. You can also ditch the plastic wrap and put the pans in your oven WITH a bowl of water. Only turn on the oven light. It will make for the coziest spot for your pizza dough to rise.
6pm - Take the pans out of the oven!! Then turn your oven to 425 degrees. Top your pizzas with your favorite sauce and toppings.
Bake for 20 minutes, or until the bottom is golden and the middle on the top is fully melted and the cheese is golden.
