The Most Delicious Sourdough Discard Pancakes

I’ll let you in on our secret and tell you: Sourdough Pancakes do not have to be flat! Our sourdough pancake recipe is so easy and makes the softest and fluffiest pancakes! You use some of your leftover sourdough discard and you can enjoy them today or save the batter in the fridge to enjoy later in the week.

I love sourdough recipes that are simple and that make it easier to enjoy fresh homemade goodness even on busy days. I almost always make a triple batch of these so we can have fresh sourdough pancakes all weekend without any of the mess or prep! Bonus, this recipe is amazing even if you don't have sourdough discard!

Aaron thinks it's way more fun if you have a cartoon from your childhood playing while you make them. I'm not joking. He puts the iPad on the counter and plays Duck Tales while he whips these up. 

The kids will eat these sans syrup they're so tasty. However you top yours, I hope these help you fill your table with happy smiling faces as you tackle a Saturday together.

The BEST Pancakes EVER Sourdough Recipe

  • 1/2 cup milk

  • 1 1/2 Tablespoons white vinegar

    **mix the milk + vinegar and let rest while you prep the other ingredients

  • 3/4 cup all-purpose flour

  • 2 tablespoons white sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 cup sourdough discard

  • 1 egg

  • 2 tablespoons butter, melted

To start, in large bowl combine the milk and vinegar and set aside for 5 minutes : this is CRUCIAL! It must sit together on it's own for at least 5 minutes before adding it to the rest of the ingredients. Look at you! You just made homemade Buttermilk!

While the milk and vinegar are setting, in a medium sized bowl whisk together the flour, sugar, baking powder, baking soda, and salt.

Once the timer goes off for the milk, whisk the egg into it then whisk in the melted butter and sourdough discard. Pour the wet ingredients into the flour mixture and whisk until the lumps are gone.

Now you're ready to start making some cakes OR if you’re prepping this to have ready for this weekend you can cover the bowl and pop it into the fridge until you’re ready.

Heat a large skillet over medium heat and coat with cooking spray or butter. Pour 1/4 cup fulls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until lightly browned on the other side.
