Spiced Vanilla Pear Bread Recipe
3 medium sized Pears, peeled and coarsely chopped
2 teaspoons (15 grams) vanilla extract
1/4 cup (54 grams) vegetable oil
1 and 1/2 cups (350 grams) granulated sugar
2 eggs
1/2 cup or 130 grams Sourdough Discard (either cold from the fridge or fresh from extra levain)
1 teaspoon (5 grams) baking soda
1/2 teaspoon (5 grams) salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/4 teaspoon cloves
1 and 3/4 cups ( 320 grams) all purpose flour
this recipe works well with gluten free 1-to-1 flour as well!
Preheat the oven to 350 degrees. Grease the pan of your choice : loaf pan, bundt pan, or muffin cups and set aside.
Add the chopped pears, vanilla, oil, sugar and eggs to a large mixing bowl and blend until the pears are mashed.
Add in the Sourdough Discard, baking soda, salt and spices and mix until well combined. Then add in the flour and mix until fully incorporated.
Pour into the prepared pan and bake for 45-55 minutes for loaves or bundt pans, or until your knife comes out clean. The baking time varies depending on how juicy your pears are, so check consistently from 45 minutes on.
If you’re making muffin size bundt cakes bake for 18-22 minutes.
Want to make it an even yummier bread? Add a Molasses Crumble to the top (this basically turns it into cake ;)
1/2 cup butter, room temperature
1/4 teaspoon salt
1 teaspoon cinnamon
1 Tablespoon Molasses
1/2 cup brown sugar
1 rounded cup flour
**this crumble topping is enough for 2 loaf pans. You can freeze half of it and add it to the next bread you make!
Cheers to creating a home that welcomes your family back at the end of the day. Whether you're baking these in the evening, the morning or during the day there is just something about coming home to a house that greets you with warm spices and fresh baked pear bread. Happy Baking!
