The Easiest Rhubarb Simple Syrup

When Spring time rolls around and the weather begins to warm up enough for us to spend evenings outside I get all inspired to fill our glass pitcher with fun spritzers - my favorites are the ones that we can flavor straight from the garden. Better yet is when they have the most beautiful colors. Which is why the Rhubarb Simple Syrup is one of my favorites.

It’s soft coral color plus the tangy taste of the rhubarb make for a perfect addition to sparkling water, tonic or even your favorite flavored bubbly - add in a jigger or Gin or Vodka and you have the prettiest happy hour on your hands. PLUS when you’re done making the simple syrup you’ll have the yummiest Rhubarb Sauce to enjoy. Let’s get cooking!

Rhubarb Simple Syrup

  • 2 cups granulated sugar

    • or try 1 1/2 cups Honey!

  • 4 cups water

  • 6 large stalks of Rhubarb cut into 1/2 inch chunks

Add all ingredients to a medium sized pot. Heat on high until the mixture begins to boil, then turn down to keep it simmering. Simmer for 20 minutes then strain the mixture through a mesh sieve. Once the syrup has cooled transfer to storage containers and keep in the fridge for up to a month!

Now give that strained rhubarb sauce a taste - delicious isn’t it! Enjoy immediately, or store in a lidded jar and spread it on english muffins or toast, serve warm over ice cream or you could even bake up a batch of Rhubarb Jam Bars.

If you’re feeling creative try one of these add ins to the simple syrup. Just note that these also change the flavor of the remaining rhubarb sauce.

  • slice 1 jalapeno, seeds and all and allow to simmer with the rhubarb. It gives the sweetness a little kick of spice!

  • for a more tart syrup, cut back the sugar by 1/2 a cup or more and add in the zest of 1 Lime. This creates more of a bitters than a syrup.

  • If you want to boost the color, add in a couple of smashed cherries.
