Fresh & Flavorful (dairy & gluten free!!) Appetizer : Red Pepper Dip
When it comes to appetizers and small bites, dip dinner, or charcuterie boards …. I’m a fan. Give me all the flavors and bites! This dairy free uber healthy dip will fit right in on any platter and be gobbled up before anyone realizes they’re eating veggies ;) Blending fresh jalapeño, and lime juice, balsamic vinegar and roasted red peppers is all things flavorful and perfect for any summertime snack or dinner.

Say hello to all things fresh and flavor packed! By the way - this was lunch today…a tray loaded with veg, sweet potato chips and Roasted Red Pepper Dip - all things YUM!
Roasted Red Pepper Dip
1 (16 oz) jar Roasted Red Peppers (drained)
1 1/4 cup raw walnuts
2 Tablespoons Olive Oil
2 Limes, juiced
1/4 cup Balsamic Vinegar
1 teaspoon Cumin
1 teaspoon Sea Salt
1/2 Jalapeno (throw the entire thing in if you want it spicier!)
6-10 sprigs of Cilantro, add in the stalk and all
Using a food processor or blender - pulse all ingredients besides the Red Peppers until a smooth paste forms. Add in the drained Peppers, process to your desired consistency, transfer to a serving dish and enjoy!
We love this dip with a full board of sliced cucumbers, peppers, sweet potato chips and tortilla chips.
