Balsamic Glazed Meatloaf : one of our most requested family dinners!

I know that Meatloaf can bring back a lot of odd memories for folks. Try to set all of those memories aside and get ready for the most delicious cozy winter dinner. This is one of our family’s most requested meals and the best part is that you can make a double batch and have leftovers for lunch and another dinner too. Last time I made it everyone was fighting over the leftovers! Here’s the secret ingredient, Balsamic Vinegar. Do not pass on the extra glaze. You’ll want to drizzle it over every slice!

Our family loves having the meatloaf with Yukon Gold Mashed Potatoes plus our Roasted Beet & Butternut Squash Salad from our Cookbook Dinner Changes Everything. It’s cozy and delicious with roasted cauliflower or butternut squash rounds, garlic sauted greenbeans or as meatloaf sandwiches for lunch.

However you serve it, I have no doubt your family will be just as thrilled as our is when they see it on the weekly menu.

Balsamic Glazed Meat Loaf

  • 1 lb lean ground beef

  • 1/2 lb ground pork or turkey, your choice!

  • 1 cup bread crumbs

  • 1 onion minced

  • 1/2 cup milk

  • 2 tablespoons ketchup

  • 1 tablespoon balsamic vinegar

  • 1/4 teaspoon nutmeg

  • 1/2 teaspoon fresh ground pepper

  • 1/2 teaspoon garlic powder

  • 1 teaspoon salt

  • 1 egg

Mix it all up and pat it out on a foil lined baking sheet.

Then Glaze!!

Mix up…
2 Tablespoons Ketchup
2 Tablespoons Balsamic Vinegar
1/2 Tablespoon brown sugar

Tent the meatloaf with foil and Bake at 350 for 40 minutes, remove the foil and bake for another 15 minutes. Let rest for 15ish minutes then slice and serve.

If your family loves the glaze like ours does, make extra to drizzle over the slices. Or you can use a Balsamic Glaze from the Vinegar Section in your Grocery Store as the drizzle.

From September thru the cold months of winter our family has an evening each week that we call Cozy Night. It’s a time for us to disconnect from all the busyness of the week and simply be together. We sit at the table longer, phones put away, tv off and claim this time for us. It’s amazing how many funny stories come out, or tidbits about each other’s days when there is zero rush and distraction.

I plan a special meal for our cozy nights, sometimes it’s a themed dinner like our Harry Potter Shepherds Pie & Butter Beer, Homemade Chicken Pot Pie and other nights it’s Balsamic Glazed Meatloaf. It’s the sweetest thing when the kids see what’s on the menu for the week and look forward to our cozy night together.
