Power Packed Banana Oat Muffins
Not every muffin is the same - these are a Power Packed full of goodness for you kind of Muffin. Pull out those forgotten bananas and the oats and let’s bake up the healthiest batch of muffins you’ll feel good about enjoying and feeding your family. I bake a lot and am with you in wanting to balance how many sweets are around. I started playing around with healthier baked goods so that our Red Tins could be full, the house can feel cozy and smell divine and yet we aren’t all eating loads of sugar.
When I’m baking for our events I love to pull out the ‘fancy’ muffin cups. These are my favorite - they make them in so many different colors. We like the red ones because it matches our Red Tin Treats!
It’s amazing though how just changing out the muffin cup can elevate a muffin. And now you have one of our secrets for hosting and designing events - one simple change of serving cup will create a different experience for your guests. And when it’s disposable it doesn’t create any more work for you as the host!
Here’s how you make our Power Packed Banana Oat Muffins.
Banana Oat Muffins
3 ripe Bananas
1 egg
2 Tablespoons ground Flaxseed
2 Tablespoons hemp hearts
1/3 cup Milk (feel free to use a non dairy milk!)
1/3 cup butter, melted (I like safflower and coconut oil when making these dairy free)
2 Tablespoons pure Maple Syrup
2 teaspoons pure Vanilla Extract
1 1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon nutmeg
1 teaspoon Baking Soda
1/2 teaspoon Baking Powder
1 teaspoon Salt
1/4 cup + 2 Tablespoons Raw Sugar
1/2 cup Rolled Oats
1 1/2 cups Whole Grain Flour
When making these Gluten Free I use 1 1/4 cups GF Flour
Add Ins : 1/2 cup of any of the following - Dried Fruit, Chopped Pecans, Chocolate Chips
Preheat the Oven to 350° and prep a 12 cup muffin pan with liners or grease the wells with oil or butter. Set aside.
In the bowl of an electric mixer blend the Bananas, Egg, Flaxseed, Hemphearts, Milk, Butter, Maple Syrup and Vanilla. Once the Bananas are fully creamed into the liquid add in the spices, Baking Soda, Baking Powder, Salt and Sugar. Now blend in the Oats and Flour.
Here's where you get to be creative and Add In whatever suits your fancy - Raisins, Fresh Berries, Chopped Nuts, Chocolate Chips or a mix of them all!
Spoon the batter into your muffin cups and bake for 25-30 minutes or until fully set. *If you’re using fresh fruit give them a little extra baking time. Allow to cool in the muffin tin for a bit then enjoy!
