Apple Berry Muffins
When we get to the dead of winter I start scrounging through the freezer to find the last of the blackberries picked from the summer, or apple sauce in the cellar that we made in the fall. These little Apple Berry Muffins are filling the house with a warm, sweet and spiced aroma and the Red Tins are filled ready for the kids when they get home from school.
Apple Berry Muffins
1/2 cup dark brown sugar
2 Tablespoons molasses
1 cup applesauce
1/4 cup melted butter
1 egg
1/4 teaspoon all spice
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 teaspoon baking soda
3/4 cup flaxseed meal
2 cups flour
1 cup frozen berries (dusted with flour)
powdered sugar for dusting
Preheat the oven to 350 degrees.
Grease your muffin pan (or I use a mini bundt pan) and set aside.
In a large mixing bowl combine the dark brown sugar, molasses and apple sauce. Add in the egg and beat on medium speed. Add in the spices and dry ingredients, mix until incorporated.
In a small bowl toss the frozen berries with enough flour to coat all of them.
Gently fold the berries into the batter.
Divide the batter evenly in the muffin tin and bake for 18-20 minutes.
Once they have cooled slightly dust with powdered sugar. Fill your Red Tins and Enjoy!
