The Quickest Pickled Onions For Salad, Eggs, Sandwiches and More

There’s a few toppings that have become staples in our fridge, and these pickled onions are one of them. In this. recipe, I’ll share how you can make quick pickled onions with just a jar, thinly sliced onions, seasoned rice vinegar, salt, and sugar. Let them rest for about an hour and they’re ready to add bright, tangy flavor to sandwiches, eggs, salads, burgers, pizza, hoagies, and more. The longer they sit in the fridge, the softer, pinker, and more flavorful they become. You can also use the same pickling liquid for carrots, radishes, cabbage, or other veggies — and even save that onion-infused vinegar for dressings or sauces!

Quick Pickled Onion Recipe

Ingredients

  • Quart sized wide-mouth jar

  • 1 thinly sliced purple onion (white or red works too, I think the purple ones look the prettiest)

  • Seasoned rice vinegar

  • 1 tsp of salt

  • 1 tsp of granulated sugar or honey

Instructions

Thinly slice your onion and toss it into a quart sized widemouth jar. Pour enough seasoned rice vinegar in to cover the onions (roughly 1 1/4 cups) and add 1 tsp of salt and 1 tsp of sugar, raw sugar or honey.

Let the jar sit at room temperature for about 1 hour, shaking it every 30 to 40 minutes to help the onions soften and pickle evenly.

Store pickled onions in the fridge and use them throughout the week on sandwiches, burgers, tacos, salads, eggs, pizza, hoagies, or anywhere you want a quick burst of tangy flavor.

A Few Pickling Tips:

I like to use a plastic BPA free lid on my pickle jar because a metal one ends up rusting from sitting in the fridge with the vinegar of the pickles. I’ll link my favorite tools below in case you want a few of your own ;)

Your pickled onions can last in the fridge for months and months and months - The longer they pickle, the softer and more tangy they become. Vinegar is a disinfectant and will keep whatever veggie is in it free from bacteria and mold pretty much forever! Sometimes I pickle thinly sliced radishes, carrots, or cucumbers along with the onions and they taste great when they all pickle in the same jar.

You can also reuse your pickling liquid over and over! So don’t throw out that vinegar if all the onions have been eaten up. Simply add in more fresh veggies and top off with a little seasoned rice vinegar if your pickling liquid no longer covers all the goodies inside.
