Easy, Bake the Same Day, Sourdough Dinner Rolls

These sourdough dinner rolls are so soft and fluffy, slightly sweet AND you can bake them the same day! No need to mix and wait, you can let the bread maker or stand mixer do the work, let the dough rise, roll and bake. These are a staple through the cooler months for breakfast with butter and plum butter, or with soups and stews or serve them with all the sandwich fixings! Get that extra fed sourdough starter or Levain and mix up a batch of dough. If you have a bread machine you can throw the ingredients in there and let it do the work of kneading and rising. Then roll the dough balls, let them rise while you prep dinner and then bake! This recipe makes enough for 15 big rolls, or go ahead and make the dough balls smaller and you can have mini rolls. Want to go a little wild? Some days when we’re having these with soup I hide a cube of cheese into the middle of the dough ball and make cheesy rolls! Want to know my secret tip of where to find the best bread machine? The thrift store. No, I am not joking about getting a bread machine from a thrift shop. You simply need it to turn on and run the dough cycle, and double check the dough hook is in there! You’ll save yourself about $100 PLUS you’ll give your family a whole lot of delicious homemade bread.

I rarely use our machine for making loaves of bread, but it gets used ALL THE TIME for pizza dough, cinnamon roll dough, dinner rolls, focaccia and yes, dinner and cheesey rolls! **one caveat, I do not suggest using your bread machine to mix and rise traditional sourdough dough. Some days we want dinner rolls and I don’t have any extra fed starter, that’s when I make our Traditional Dinner rolls with or without Cheese they’re incredible. We love having the rolls with our Winter White Bean Soup, or the Herb Braised Roast from our Cookbook

Ciderpress Lane Sourdough Dinner Rolls

Ingredients:

  • 1 cup water

  • 1/2 cup milk

  • 2 Tablespoons butter

  • 2 Tablespoons honey

  • 150 grams fed sourdough starter

  • 550 grams all purpose flour

  • 1 and 1/2 teaspoons active yeast

  • 1 generous teaspoon salt (8 grams)

Directions:

  • Put the water, honey, milk, and butter in a microwave bowl. Heat in the microwave for 1 minute or until the butter and honey are melted and easy to mix in.

  • Once it is warm and combined, add it into your mixing bowl. Add in your sourdough starter and mix in.

  • Once combined you can add in the flour and yeast. Mix to combine then add in the salt

  • Knead for 3-4 minutes

  • Transfer the dough to an oiled clean bowl, cover and let rise for 30-45 minutes until it’s about doubled in size.

  • Prep your 9x13 baking pan by oiling or spreading butter on the bottom and sides.

  • Divide the dough into 15, 2.5 ounce balls. Or make them smaller if you’d like to have smaller rolls! I like playing around with the sizes. Some nights we make jumbo rolls like in this photo.

  • Shape the rolls and fill the pan.

  • Cover and let rise for another 30-45 minutes until they’ve doubled in size

  • Preheat your oven to 400 degrees while the rolls are rising.

  • Bake at 400 degrees for 25-30 minutes or until they are golden brown on top.

  • As soon as you take the rolls out of the oven, rub or brush butter over the top.

  • Serve warm! If you’re saving them for the next day, let them cool completely then cover the pan with plastic wrap or store in an airtight container.
