Fruit Butter : Easier than Jam!

Fruit Butter is the easiest way to transport yourself to Fall. It is the epitome of late summer days, the sweet smell of fruit and spices simmering away. It will transport you to Autum of a bygone era and the best thing is that it's WAY EASIER to make than jam and much healthier. It takes less sugar, no fancy pectin and you have the freedom to fill it with any fruit or flavors you want. No, it does not have any dairy in it or actual butter ;) It's simply that it's thick like spreading butter. It's a different texture than jam because it doesn't have pectin. It freezes well and keeps in the fridge for a couple months.

The number one way we use our fruit butter is when we make Thumbprint Scones! They are a staple in our house and one of the Red Tin Treats we serve at many of our workshops. We also love to use the fruit butter on English Muffins, Sourdough Bread, Toast, Ice Cream, Savory Grilled Meat and more. Before we dive into the Recipe details here are our favorite tools to use when making Fruit Butter:

Fruit Butter Recipe:

  • 4 pounds of fruit

  • 2 cups brown sugar

  • 1 tablespoon cornstarch

  • 1/4 teaspoon salt

    • These spices are all optional! We love the delicious flavor they add but feel free to get creative and add even more options to go savory or add a fun hint of ginger. This is the fun of playing with fruit.

    • 2 teaspoons cinnamon

    • 1/2 teaspoon nutmeg

    • 1/4 teaspoon cloves

TO MAKE:

Prep The Fruit: Halve, pit, core and peel the fruit.

Combine all  ingredients in a large stock pot, or crock pot. Set on low and lightly simmer covered for 4 hours, and then remove the lid for the final 4 hours stirring  occasionally. If you’ll be around the kitchen you can put the crockpot on high, leave the lid off and stir every 30ish minutes. It will take much less time but it will need your attention to stir it occasionally.

Once fully reduced blend the mixture with an immersion blender until it is completely pureed and smooth. Ladle into jars to can, freeze or enjoy immediately! *it will thicken even more when chilled!

TO STORE:

  • we love canning ours so we can keep it in our cellar to use in the year to come.

  • you can freeze the fruit butter, it will keep for at least a year

  • fruit butter will stay fresh in your fridge for a couple months!
