Sourdough Discard Berry Rhubarb Crumble
It’s rhubarb season, and this easy sourdough discard rhubarb crumble is one of our favorite summer desserts! This recipe has a sweet, buttery crumble topping made with sourdough discard and a gooey fruit filling that can be made with rhubarb, plums, berries, peaches, apples, or any mix of fruit you love.
The best part? You don’t need active, bubbly starter for this recipe. Cold sourdough discard works beautifully in the crumble topping and gives it the most delicious texture.

Rhubarb Sourdough Crumble Recipe:
Topping:
200 g (1 1/4 cups) all purpose flour
160 g (2/3 cup) brown sugar
90 g (6 Tb) granulated white sugar
6 g (2 tsp) cinnamon
2 g (1/4 tsp) salt or 16 cracks
113 g (1/2 cup) room temperature salted butter
130 g (1/2 cup) cold discard
Filling:
1100-1200 g (8 cups) rhubarb, berry mix
160 g (3/4 cup) granulated white sugar
36 g (3 Tb) corn starch
1.5 g (1/8 tsp) salt or 10 cracks
Instructions:
Bake at 375 till the filling is bubbly and the crumble topping all looks slightly toasted
Let cool until the filling is no longer bubbling and it has set a bit. The longer it rests the thicker the filling will get.
