We’re planting extra of all of our favorite Garden Squash and Cucumbers. These are the varieties that have become staples in our garden because of how delicious they are and because they do so well in our PNW growing conditions.

We harvest our squash the end of September and hold them In our garage to be used as wanted throughout the fall and winter. When we have big crops we’ll still be using garden squash in January, they last so long when kept in a cool spot.!

• Delicata Squash : one of our all time favorite squash to grow! Each plant sets on lots of squash. They are smaller so they ripen faster and they are so easy to prepare. They’re named Delicata because their skin Is so thin and delicate, you don’t have to peel them to enjoy. I deseed and slice them thin to make squash ‘fries’, we eat the skin and all! Or roast the halves and fill them as squash boats with all sorts of stuffing combinations!

• Spaghetti Squash : another family favorite, we roast these In half and top the Spaghetti like squash noodles with all sorts of sauces!

• Butternut Squash : let this lovely grow on the edge of your bed and drape down, it’s such a beautiful squash vine. We love roasting our squash and seasoning with cumin and coriander, making creamy butternut filling for eggplant lasagna or filling big stock pots with butternut squash soup!

• Armenian Cucumber : this Is our all time favorite cucumber to grow! The skin is very pale green, almost cream colored, It’s thin and the cucumber itself is so sweet. Plus they get big and are still delicious.

• Japanese Climbing Cucumber : these are long and slender with tender skin, similar to an English Cucumber but sweeter!

• Alpha Cucumber : it’s sounds like a basic cucumber but these plants produce so many smaller cucumbers which makes it so they ripen faster!
