We love using the flowers of all of these as garnishes in spritzers and cocktails, on salads, frozen into ice cubes, sprinkled over eggs, baked into Focaccia …. however you want to pretty up your table and dishes. Plus all of these varieties will bloom more, the more you use the flowers, so cut away and let the plant produce more blooms for you throughout the summer.

Beyond the edible flowers, we love these varieties because they are all amazing at self seeding! Which means they’ll plant themselves for you year after year. Even though they are not true perennials, the plants will return each spring. Mint and Pansy’s actually act like Perennials most winters. Over the mild winters our Calendula and Batchelor Buttons have acted like perennials as well!

At the end of the growing season simply let the flowers die back on the plant. They’ll turn to seed, drop, and regrow in the spring.

Plant in full sun and group them together to create the prettiest edible flower patch.
