Plum Honeyed Ricotta Bites

I love appetizers. If I had it my way, dinner would actually be a compilation of small bites and these little plums would definitely be on the menu! These don't require any serious chopping, sauteing or baking. So, all of you kitchen phobics can take a deep breath, you can make these! And if you're crunched for time these are perfect.

Appetizers are basically your secret weapon : they buy you time, keep your guests happy, and send this big silent message that you are ready...when in reality you're probably still getting the final dishes finished in the kitchen. It's a stead fast rule in our home that if we're having a dinner party, there will always be appetizers.

 

Plum Honeyed Ricotta Bites

  • 12 small plums

  • 3/4 cup ricotta cheese

  • 2 Tbsp. honey

  • 10 leaves of fresh basil

  • salt (for garnish)

  • Balsamic Glaze (this will be by the Balsamic Vinegar at the store, check Safeway, Fred Meyer or Trader Joes)

Wash and dry the plums. Cut them in half and remove the pits. Place them cut side up on a serving tray. Mix the ricotta and honey in a small bowl, then put one small spoonful on each plum half. Keep in mind these are designed to be a small bite, you want to be able to see the plum still so don't overload it with the ricotta mixture. You can place the ricotta filled plums in the fridge if your guests won't be arriving for a bit. Just before serving, julienne (cut into long thin strips) the basil leaves and garnish. Drizzle with the balsamic glaze and sprinkle with salt.

And you're ready to serve! Place your appetizers by the drinks and invite your guests to enjoy while you finish whipping up dinner.
