Puff Pastry Brunch Cups (With Easy Prep The Day Before!)
We’re Brunch fans and when everyone in our house agrees that a recipe is GOOD, you know it’s pretty amazing. The best thing about these Puff Pastry Brunch Cups is that they’re SIMPLE and yet they look and taste super fancy. Even better is that you can prep the ingredients a day or two before to make the day of your brunch even easier!
Puff Pastry Brunch Cups
1 box Puff Pastry - you can find this in the freezer section near the pies, each box comes with 2 puff pastry sheets
18 large eggs
1 lb of bacon, cooked and roughly chopped
1 bunch chives
Salt & Pepper to Garnish
1 batch of Cheese Sauce :
3 tablespoons butter
2 tablespoons flour
1 cups Swiss cheese, grated
1/2 cup Gruyere, grated
1 cup Milk
1/4 teaspoon salt
To start, take the puff pastry out of the freezer and set it on the counter to allow it to thaw.
Preheat the oven to 425 to make the Bacon. Cover a large baking sheet with foil and lay the bacon out in 1 layer. Roast the bacon for 10-15 minutes until cooked through but not dark or crispy. Once cooked, remove the bacon from the bacon sheet and allow to cool. Once cooled, coarsely chop and set aside.
While the bacon is cooking make the cheese sauce. In a large sauce pan, melt the butter over medium heat. Add in the flour, whisking to combine. Cook the butter/flour roux for about minute, stirring continually. Pour in the milk, whisking until lumps have dispersed. Then add in the cheese and 1/4 teaspoon of salt. Remove from the heat and set aside.
The puff pastry should be ready to work with now. Get your muffin tins ready by spraying or greasing each muffin cup. Unfold the sheets of puff pastry and cut each sheet into 9 pieces - one box of puff pastry will make 18 Brunch Cups. Roll each piece of cut pastry out to almost twice its size so that it can easily fill the muffin cup. Press it firmly into the bottom and sides so the edges come just over the top of the muffin cup.
Now you’re ready to assemble! Fill each cup with a spoonful of cheese sauce, sprinkle 2 or 3 pieces of bacon in, then top with 1 egg, sprinkle with 2-3 more pieces of bacon.
Bake at 375 for 13-17 minutes depending on how firmly you’d like your eggs set. When you remove the muffin tins from the oven garnish with fresh chives, salt and pepper. All them to set in the muffin tin for a few minutes before you remove them. This helps them to firm up a bit before getting jossled.
These are best served straight from the oven!
Here’s how to prep this recipe ahead of time:
make the cheese sauce, transfer to a storage container and refrigerate
make the bacon, chop, transfer to a storage container and refrigerate
prep the puff pastry, getting each cup pressed into the prepared muffin tins. Cover completely with plastic wrap and freeze. Take them out of the freezer 40 minutes prior to assembly.
